Chicken Coating

You put this mixture in a bag with a piece of chicken then shake it. After that you bake it. Get it?

1 1/2 C dried bread crumbs
1 1/2 tbsp cornmeal
1 1/2 tbsp corn starch
3/4 tbsp salt
~5 tsp of spice blend.*

* One option:
3/4 tsp garlic powder
1/2 tbsp onion powder
1/2 tsp black pepper
3/4 tsp chili powder
1/2 tsp thyme
3/4 tsp oregano
Blend to a fine powder. (I used my mortar and pestle)

* I also used pre-blended mixtures labelled “Italian”, “Mexican” and “Curry.” Just make sure you use an unsalted spice blend or reduce the salt from the base mixture as appropriate.

Coat chicken well with this powder. Bake until done. I did legs and backs for ~1 hour at 375F.

Note: this recipe should make enough to coat 15-20 pieces of chicken.
