Salsa over the years

The base recipe I’ve been using for years:

5lbs Ripe tomatoes, chopped. (Scalded and peeled)
3 Mild green chiles, chopped
1 Large sweet onion (yeah, just go ahead and chop everything)
2 Medium green peppers
1 Large red pepper
1 Medium yellow pepper
2 Poblano peppers
8 Jalapeño peppers
2 cloves garlic
1 5.5oz can tomato paste
3/4c vinegar
1 Tbsp pickling salt
1 tsp paprika

Combine all ingredients in a large pot. Bring to a boil, uncovered, over medium heat, stirring occasionally.
Boil gently for 60 minutes, stirring occasionally, until thicked to desired consistency. (it will thicken more as it cools)
Taste for hotness. Add more jalapeño peppers, if desired.
Pour into hot, sterilized jars, seal. Or freeze.
Makes about 5 pints.

5 Red cayenne
1/2 tsp Jalapeño powder
Lime juice in one batch
