Meat Loaf

Not the singer…

I’ve made this a few times with a few variations. It’s time to write it down.

1 1/2lbs lean ground beef
1/2 cup bread crumbs (I’ve been using panko, mostly because it’s what I have)
1/4 cup hickory bbq sauce (kraft or president’s choice) in the meat mixture
1/4 cup hickory bbq sauce poured on top
(I always forget when it says “divided” at the end of the line)
1/4 cup minced fresh parsley (I prefer flat “Italian”)
1/3 cup minced onions (don’t overdo this… make sure they’re small. I’ve used red onion)
2 tbsp freshly grated parmesan cheese (mmm, the natural source of MSG)
1 egg
1 clove garlic, minced (or two)
1/2 tsp oregano (or thyme, or basil)
1 tsp salt
1/2 tsp black pepper

Preheat oven to 350f.
Mix everything (except the second 1/4c of bbq sauce) and form into a log. Pour the second 1/4c of sauce on top. I bake this on a rack placed over a baking dish lined with foil to ease cleanup. About 1 hour, until internal temperature reaches 160f
Let stand a few minutes before slicing.
